2 avocados, stone removed
6 medium potatoes
1 cup tomatoes
1 tablespoon of oil
Pinch of salt and pepper
2 tablespoons fresh basil leaves, sliced (optional)
1. Wash potatoes and grate using a food processor or grater.
2. Sprinkle potatoes with salt.
3.Place potatoes in a clean tea towel and squeeze to get all the excess liquid out.
4.Place grated potatoes in a bowl and add eggs, mix well.
5.Heat a pan over medium head and add oil.
6.To make the fritters, drop potatoes into pan (2 large spoonful’s per fritter), using back of the spoon to spread fritters. Turn down the heat and cook until fritters turn golden, usually around 7-10 minutes.
7.Once all the fritters are cooked place onto a plate.
8.Mash the avocado and place a spoonful on top of each fritter. Place tomatoes on top. Season with salt and pepper, and sprinkle with basil (if using).
