Cauliflower and tuna macaroni cheese


Serves 4

  • ¼ packet [125g] macaroni pasta
  • ½ cauliflower head, sliced into bite-sized pieces     
  • 1 cup of broccoli, sliced into bite-sized pieces
  • 1 x 440g can creamed corn
  • ½ cup milk
  • ½ cup grated cheese
  • 1 x 400g can tuna in spring water, drained
  • ¼ cup grated cheese (to sprinkle on top).


Preheat oven to 200°C.
Place macaroni in a saucepan of boiling water and boil for 8 minutes.
Add cauliflower and broccoli to pasta and boil for a further 3 minutes. Drain and set aside.
Mix creamed corn, milk and cheese together in a bowl.
Add tuna, pasta and cauliflower/broccoli to the corn mixture.
Place in a large roasting dish and sprinkle with second quantity of cheese.
Bake in preheated oven for approximately 30 minutes or until hot through and golden on top.
