Lentil Bolognaise


  • 1 Tbsp oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 3 cups vegetables, chopped or grated (such as silver-beet, broccoli, cauliflower and carrot)
  • 2 Tbsp tomato paste
  • 1 can of tomatoes
  • 1 can of lentils
  • 200g mince (optional)
  • 1/2 pack pasta (any variety works well).


Turn pan onto medium heat, add oil, onion and garlic, and cook for 2–3 mins.
Add vegetables (and mince if using). Cook until vegetables are slightly soft (or mince is brown all over).
Add in tomato paste and can of tomatoes. Stir to combine and bring to slight boil (simmer).

Cover and cook for 10 mins.

Remove lid and add canned lentils. Cook for a further 5–10 mins.

Serve with pasta and top with a sprinkling of grated cheese.
