Savoury vegetables and mince


  • 1 tablespoon of oil                                                 
  • 1 onion, peeled and finely chopped                         
  • 500g beef mince                                                              
  • 1 teaspoon stock powder                                        
  • 2 cups grated kumara                                                                    
  • 400g can tomatoes                                                 
  • 2 cups of water                                                      
  • 2 cups silver beet leaves and stalks, finely sliced
  • 2 small potatoes and 3 yams (cooked and diced, to sprinkle over the dish) 
  • 1 cup frozen peas or 1 cup diced carrot.


Heat oil in a large saucepan.
Add onions and cook gently until soft.
Add mince and stir fry until brown.
Add stock powder, grated kumara, tomatoes, silverbeet stalks and water.
Cook for 10 minutes then add silverbeet leaves and peas (or carrot) and cook for a further 5 minutes.                                                                                        
Serve with cooked diced potatoes and yams.
